Thanksgiving can be stressful enough with all the cooking and prep work, that's why easy recipes are a must, especially easy appetizer recipes.
These baked brie crostini can be prepared in minutes so all you have to do is pop them in the oven and place them on a serving dish.
Crusty bread is smeared with some homemade pumpkin butter and topped with buttery, melted brie cheese.
The crostini get finished off with a drizzle of hot honey, sea salt and thyme.
So simple, yet festive and delicious.

Fair warning, they're dangerously good. I think I had about 8 of them while taste testing the recipe ;).

Baked Brie Crostini Ingredients:
- French baguette (or other crusty bread)
- olive oil
- pumpkin butter (homemade or store bought)
- brie cheese
- hot honey (or regular honey)
- sea salt
- thyme/sage, for topping
Let's start with the bread.
Crostini means "little crusts" in Italian.
A baguette works best because it's long and slim, making the perfect small slices of bread for your appetizers.
However, if you can't find a baguette, you can use any crusty bread you'd like (just make sure the slices aren't huge, otherwise you won't have bite-size pieces).
Now for the pumpkin butter.
I prefer making my own pumpkin butter because it's so easy and tastes better, but if you're in a pinch feel free to use store bought.
Here's my easy homemade pumpkin butter recipe.
The recipe makes about 3 cups, so you'll have plenty leftover.

You'll need an 8 ounce wheel of brie cheese.
I love the melty-ness of the cheese and it pairs perfectly with the sweet pumpkin butter.
I cut the brie in half and then slice across for 2" slices.
I personally love the hot honey.
It adds a little touch of sweet spice, however regular honey works just fine too.
Don't forget the sea salt and herbs!
How to make Crostini with Melted Brie:
- Preheat oven to 400 F. Arrange your sliced bread onto the baking sheet and drizzle both side with olive oil. Bake for about 5-7 minutes until lightly golden.
- Carefully remove pan from oven. Spread each slice of crostini with pumpkin butter and top with a slice of brie cheese. Bake again for 7-8 minutes or until the brie is nice and melted.
- Remove from oven and transfer to serving dish. Drizzle with hot honey. Sprinkle with sea salt, thyme and sage.
- Serve immediately.
Tips for the perfect baked brie crostini:
- Don't overcook your bread slices! Yes you want them crispy, but not too hard to bite into like hockey pucks.
- Use a serrated bread to easily cut through the baguette and brie cheese.
- Don't forget the sprinkle of sea salt, it really brings out the flavors.
- Try to time baking these so you can enjoy them while the brie is still warm and melty, that's the best part!
Make ahead crostini instructions:
- I don't recommend making these crostini ahead of time. You want the bread to be freshly toasted and the cheese to be nice and melted.
- However, you can prep the ingredients so it's easier to put the crostini together before your guests arrive.
- Make your pumpkin butter up to 2 weeks ahead of time.
- Slice your bread and arrange on baking sheet up to 3 hours before your guests arrive. Slice your brie cheese and keep in refrigerator until ready to bake.
- Assemble the brie crostini up to 1 hour before needed, then bake as soon as your guests arrive.
Other Crostini Topping Ideas:
- feta or goat cheese instead of the brie
- add a slice of prosciutto on top of the pumpkin butter, then add brie cheese
- cream cheese with pumpkin butter
