There is nothing like a good margarita and these days I can't get enough spice in my margaritas.
The combination of tequila with lime juice and that hint of spicy, makes for one delicious cocktail recipe.
My spicy pineapple cilantro margarita is everything you'd want in a margarita: slightly sweet, tangy and a hint of spicy.
Fresh cilantro, lime juice and chipotle sauce gets muddled together for the base of flavor.
Next, we add pineapple juice, tripe sec, a little bit of honey and tequila. Shake everything up and pour over ice.
Tajin seasoning with a little bit of coarse sugar makes the perfect rim which adds to the spiciness in this margarita recipe.

Typically a spicy margarita uses jalepeno peppers for the spice, but I'm switching it up by using chipotle peppers.
The chipotle peppers add a wonderful spiciness and they have a smoky flavor which goes perfectly with the tequila, cilantro and lime juice.
We are celebrating Cinco de Mayo tonight and these pineapple margaritas are the perfect addition to our fiesta!
Ingredients for Spicy Pineapple Margarita:
- lime juice
- cilantro
- chipotle pepper sauce (adobo sauce from canned chipotle peppers)
- pineapple juice
- triple sec
- honey or agave
- tequila (I prefer silver)
- Tajin seasoning (for the rim)
- Coarse sugar such as turbinado sugar (for the rim)
- lime and pineapple slice (for garnish)
The fresh cilantro gives these margaritas a beautiful flavor.
I know a lot of people dislike the taste of cilantro, so if that's the case you could omit it or use basil or mint.
The spice for these margaritas come from adobo sauce.
You can buy canned chipotle peppers in adobo sauce at your local supermarket.
If you want more spice, you can use more sauce or try muddling half of a chipotle pepper which is more spicy than just using the adobo sauce.
I love the Tajin and sugar rim with these pineapple margaritas. You can find Tajin at your local supermarket.
How to make Spicy Pineapple Cilantro Margaritas:
- Place Tajin seasoning and coarse sugar on a plate. Mix together.
- Rub a lime slice along the rim of your glass then dip it into the Tajin sugar mixture for your rim. Set the glass aside.
- In a cocktail shaker or large glass, add the lime juice, cilantro and chipotle sauce. Use a muddler to release the oils in the cilantro.
- Add pineapple juice, triple sec, honey and tequila. Cover and shake to combine everything.
- Fill your rimmed glass with ice. Pour the tequila mixture into the glass and garnish with a lime slice and pineapple slice. Garnish with more cilantro if desired.
- Serve and enjoy!
*If you want your margaritas spicier, you can add more adobo sauce or cut a chipotle pepper in half and muddle that.
The actual chipotle peppers have more spice in them than the sauce.
What can I use if I run out of triple sec for these spicy margaritas?
If you don't have triple sec you can substitute with Grand Marnier or Cointreau.
You could also use brandy with a little orange zest too.
If you don't have any of that you can omit it and use extra pineapple juice.
Spicy Pineapple Margarita with Tajin Rim:
The best part of a margarita is the salt or sugar rim.
These spicy pineapple margaritas get a zesty Tajin and sugar rim.
If you're not familiar with Tajin it's a seasoning blend of chili peppers, lime and salt. It's the perfect rim for margaritas!
I like adding the coarse sugar (like turbinado sugar) to balance the spicy.
You can certainly use a plain salted or sugared rim too.
Can I make these spicy pineapple margaritas into a pitcher of margaritas?
Yes!
Just multiply the recipe by how many servings you'll need.
I suggest muddling the cilantro with the lime juice separately as stated in the recipe and then adding it to the pitcher along with the remaining ingredients.
I made these spicy pineapple cilantro margarita for my family to taste test this past week for Cinco de Mayo and everyone loved them!
My sister likes things a bit more spicy, so she added extra chipotle sauce in her margarita, whereas my sister-in-law likes a mild amount of spice so she thought these were perfect as is!
My dad isn't a fan of cilantro but to my surprise he actually liked these spicy margaritas!
I think the combination of chipotle and pineapple really mellows the cilantro flavor.
Either way, these spicy pineapple and cilantro margaritas are one of my favorites (and for good reason).

- ½ teaspoon honey or agave
- 2-3 ounces silver tequila
- Tajin seasoning (for the rim)
- coarse sugar, such as turbinado (for the rim)
- pineapple slice, for garnish
- lime slice, for garnish

Notes
*If you want your margarita more spicy, you can add more chipotle pepper sauce or muddle a half of a chipotle pepper. The actual chipotle peppers are more spicy than the sauce!
*Tajin seasoning can be found at your local supermarket. You can also use a plain salted or sugared rim.
*To make a pitcher: multiply the ingredients by how many servings you'll need. I would still muddle the cilantro, lime and chipotle sauce seperately, then add it to your pitcher with remaining ingredients. Serve over ice.
