These easy grilled mango chicken kabobs are made with marinated Thai chicken and vegetables placed on skewers and brushed with a sweet chili sauce for a quick, healthy dinner recipe!

Kabob, kebab, skewer. What's the difference anyways?
I still don't know after writing this post, but that's okay because either way you spell it, they're a delicious summer staple.
This recipe version of grilled chicken kabobs with vegetables is healthy and super flavorful.
The chicken breast gets marinated in THE BEST Thai marinade keeping the chicken moist and delicious.
Then, they're placed on skewers with chunks of bell peppers, red onion and juicy mango, then brushed with a sweet chili sauce, before getting grilled to perfection.
The best part about skewers (aka kabobs), is that you can add any vegetables or fruits you like...zucchini, pineapple, or even papaya!
I like serving these grilled mango chicken kabobs with brown or white rice and a side of grilled zucchini for a complete healthy dinner the family loves 🙂
Best grilled chicken skewers marinade:
- soy sauce
- fish sauce
- ginger
- garlic
- curry powder
- Sriracha (optional)
- lime juice
- cilantro
- brown sugar
- olive oil
Ingredients for grilled mango chicken kabobs and vegetables:
- chicken breasts
- Thai marinade
- skewers (metal or wooden)
- bell pepper
- red onion
- mango
- sweet chili sauce (homemade or store bought)
- fresh cilantro, for serving
- lime wedges, for serving
How to make grilled mango chicken kabobs:
- Mix together marinade ingredients. Cut chicken into 1" chunks and place in large zip lock bag or air tight container. Pour marinade on top, stir to coat and refrigerate for at least 1 hour or overnight.
- (If using wooden skewers, be sure to soak 30 minutes prior to grilling.) Make the kabobs by threading the pepper, red onion, mango and marinated chicken on the skewer. Repeat until you have about 4 pieces of chicken per skewer. You should get about 8 skewers total.
- Brush each kabob generously with the sweet chili sauce.
- Preheat grill to medium-high heat and spray with non-stick cooking spray.
- Add the kabobs and grill for 5-7 minutes per side until you have a nice char and the chicken is cooked through.
How long do you cook kabobs on the grill?
These grilled mango chicken kabobs take about 10 minutes on medium-high heat on the grill.
If your chicken or vegetables are on the thicker is may take an additional couple of minutes.
Also, since grill temperatures range differently, be sure to keep close watch on your kabobs so they don't burn. If they seem to be cooking too quickly, turn the heat down a bit.
The goal is to get nice grill marks on both the vegetables and chicken which is achieved with a higher cooking temperature.
For easier clean up, you can also grill these chicken kabobs on top of foil. They may need an additional minute or two to get that nice char.

Grilled Mango Chicken Kabobs
Ingredients
Thai Chicken Marinade
- 1.5-2 lbs chicken breast, cut into 1" chunks
- ¼ cup soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon fresh ginger
- 1 teaspoon minced garlic
- 1 teaspoon curry powder
- 2 teaspoons Sriracha (optional)
- 2 tablespoons lime juice (about 1 lime)
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
Grilled Mango Chicken Kabobs
- 8-10 wooden or metal skewers
- 2 bell peppers, seeds removed and cut into 1" chunks
- 2 mangoes, peeled and cut into 1" chunks
- 1 red onion, cut into 1" chunks
- sweet chili sauce, for brushing and serving (about ½ cup), see recipe notes
- fresh cilantro, for serving
- lime wedges, for serving
Instructions
Thai Chicken Marinade
- Place chicken in large zip lock bag or air tight container.
- Mix together marinade ingredients and pour over chicken, stirring to evenly coat. Place in refrigerator for at least 1 hour or overnight.
Grilled Mango Chicken Kabobs
- If using wooden skewers, be sure to soak them in water at leasts 30 minutes prior to grilling.
- Thread pieces of marinated chicken, bell pepper, red onion and mango onto a skewer. You should be able to fit about 4 pieces of chicken per skewer for a total of 8 kabobs.
- Brush kabobs generously with sweet chili sauce.
- Preheat grill to medium-high heat and spray with non-stick cooking spray.
- Place kabobs directly on grill and cook 5-7 minutes per side or until chicken is fully cooked through and vegetables have nice grill marks. Adjust grill temperature as needed.
- Garnish with chopped cilantro and a squeeze of lime juice. Serve with extra chili sauce for dipping if desired.
Notes
