Sweet Corn Ravioli

(with brown butter  lemon sauce)

A quick and easy summer dinner recipe using sweet corn, zucchini, fresh basil, lemon and mozzarella!

Sweet Corn Ravioli

Y I E L D:  2-3 servings T I M E: 40 minutes

-sweet corn ravioli -butter -fresh sweet corn -summer squash -yellow onion -garlic -lemon juice -fresh basil -olive oil -fresh mozzarella -walnuts -salt and pepper

1. Brown the butter.  Add corn, zucchini and onions.  Add lemon juice, olive oil, salt and pepper.  Cook until caramelized.

2. Meanwhile, cook the ravioli according to package directions.  Reserve 1/2 cup pasta water.

3. Once veggies are browned, add basil, mozzarella and walnuts.  Add pasta water as needed.

Top with fresh basil and enjoy!
