Peach Panzanella Salad wih Burrata

This easy peach panzanella salad with burrata is made with chunks of buttery crusty bread, juicy tomatoes, cucumber, fresh basil and balsamic vinaigrette.

Peach Panzanella Salad with Burrata

1 loaf bread butter olive oil cherry tomatoes cucumber red onion peaches burrata fresh basil/parsley balsamic vinegar lemon juice/zest garlic

1.Toast the bread:  cut into 1" chunks and spread onto baking pan.  Toss with melted butter and drizzle with olive oil.  Bake until golden brown.

2. Place halved tomatoes, cucumbers, peaches, red onion and fresh herbs in a large serving bowl.

3. Make the balsamic dressing: combine olive oil, balsamic vinegar, lemon zest, garlic, lemon juice, salt and pepper.  Shake or stir to combine.

4. Add the chunks of bread to the bowl.  Drizzle the salad with the balsamic dressing; toss to combine.  Top with pieces of burrata cheese.

Serve immediately and enjoy!
