This is the time of year where appetizers are key…With so many holiday parties and dinners (as well as Super Bowl right around the corner) we need all the quick and easy appetizer recipes as possible.

Sure, we have our trusted appetizer standbys, but sometimes we need to spruce things up…ya feel me?

A gluten free version of crostini is made with oven baked sweet potato rounds topped with red pepper jelly, goat cheese and fresh parsley for a festive & healthy holiday appetizer perfect for Thanksgiving or Christmas.

All you need Is 6 ingredients and you’ll be walking into that party like an appetizer boss.

These easy sweet potato appetizers can be made ahead too.  Just cook the sweet potato rounds up to 3 days ahead of time, store in an airtight container in the refrigerator, and when you’re ready to assemble, pop them in the oven for 10-15 minutes until crispy again before adding the toppings.  They don’t need to be served warm, so even if you make them a couple hours before your event they’ll be perfectly fine room temp!

You’ll want to slice the rounds about ¼” thick.  You don’t want them paper thin because they won’t be substantial enough to hold your topping ingredients (and you risk the chance of burning), and you don’t want them so thick that they’re like hockey pucks.

I personally love the flavor combination of the red pepper jelly with sweet potato and goat cheese, but if you prefer to use another type of savory spread like fig jam by all means go for it!  You could also substitute the goat cheese for another crumbly cheese like feta, gorgonzola or blue cheese.

Something about sweet potato and goat cheese goes hand in hand…
the mild sweetness against the tangy creaminess is so delicious and elegant.

What I also like about these sweet potato bites is how festive they look!  The red, green and white really pop against the orange making them perfect for Thanksgiving or Christmas appetizers.

Sometimes dips and cheeses can get so heavy and filling and before the main course is even served your guests are full and you’re left with TONS of leftovers…these bite-sized apps are light and perfectly portioned.

I made these back in the summer for a small get together at my house.  I planned on taking pictures of them to post on the blog but they must’ve been good because by the time I could grab one to snap a picture, they were all gone!

…Back to what I always say, keep a secret stash of leftovers at all times.  Trust the snack queen herself, nothing worse then leftover-regrets 😉

Sweet Potato and Goat Cheese Appetizer Bites

A gluten free version of crostini is made with oven-baked sweet potato rounds & topped with red pepper jelly, goat cheese and fresh parsley for a festive & healthy holiday appetizer.

Ingredients

  • 1 medium Sweet Potatoes cut into ¼” round slices (leaving the skin on)
  • 3 tbsp Olive Oil
  • Pinch of Salt & Pepper
  • 1/4 cup Red Pepper Jelly see recipe notes
  • 1/4 cup Goat Cheese crumbled
  • Fresh Parsley for garnish

Instructions

  • Preheat oven to 400 degrees. Place cooling rack on top of aluminum lined baking sheet.  Place sweet potato slices on cooling rack (make sure they are evenly spread out and not over lapping).
  • Brush both sides of sweet potato slices with olive oil and sprinkle with salt and pepper.
  • Bake 25-30 minutes, flipping halfway through, until sweet potato is soft and edges are slightly crispy.
  • Let cool 10 minutes.
  • Once cooled, spread with red pepper jelly and top with goat cheese crumbles. Sprinkle with fresh parsley.

Notes

*Red pepper jelly can be found in most grocery stores in the isle with the jams and spreads; you can substitute with your choice of jam (fig, date, apricot if desired)
*The sweet potato can be baked ahead of time and stored in an airtight container up to 3 days: Bake them for 5-10 minutes (before topping) in the oven to get them crispy again.
