Oven roasted potatoes are tossed with a vibrant, mouthwatering honey mustard dressing that is bursting with flavor for a guaranteed win-win at any occasion.  It’s much lighter than regular potato salad, and is quick and easy to make; you can also save time and make it ahead.   Serve warm/cold/room temp, it’s that good!

I have nothing against potato salad, believe me…my grandma makes the BEST potato salad.  However, if you have multiple cookout/parties/BBQ’s throughout the summer, it gets a little tiring having the same old potato salad again and again and this version definitely ups the potato-salad-game.

I feel like June and July fly by because I have something EVERY weekend.  Between cookouts, Fourth of July, and concerts we are constantly booked.  One of our good friends just got a new job in the Cayman Islands so sadly they are leaving us in a few weeks.  I mean seriously though, the CAYMAN ISLANDS??? Can you imagine working and living somewhere that’s tropical 24/7 and feels like your on vacation everyday?  I’m so happy for them though, this will be a great adventure and new chapter in their lives. (even though I will miss them like heck).  So mostly our weekends consist of  “going away” dinners, cookouts, etc. before they leave.

I made this for a side at one of our cookouts and it was a HUGE hit.  I’m pretty sure someone told me it was like a party in their mouth.  (I think that’s a good thing, right?)…I bet adding some bacon would be scrumptious :).

First lay your potatoes on a baking sheet and drizzle with olive oil, salt, pepper, garlic and onion powder and paprika.
I’m using a 1.5lb bag of the baby white, red and purple potatoes, but feel free to use any kind you like.

Roast at 420 degrees for 25-30 minutes until crispy and golden.  Place in large bowl and set aside to make the dressing.

Lick the spoon because I have a good feeling your mouth will be drooling.

Pour dressing over potatoes and toss to coat.  Serve the potato salad warm or pop in fridge for an hour to chill.

  • 1.5 lbs Baby Potatoes quartered (mixed white, red, purple)
  • 2 TBS Olive Oil divided
  • Salt and Pepper to taste
  • 1/2 TSP Garlic Powder
  • 1/2 TSP Onion Powder
  • 1/2 TSP Paprika
  • 1 Garlic Clove minced
  • 2 TBS Red Onion very finely chopped
  • 1/4 cup Honey
  • 1/4 cup Mayonnaise
  • 1/3 cup Yellow Mustard
  • Dash Worcester
  • 1/2 TSP Dry Mustard Powder
  • 1/2 TSP Paprika
  • 1/4 TSP Dill dried
  • 1 TBS Fresh Parsley or dried
  • 1 TSP Fresh Rosemary (or dried)
  • 4 Bacon pieces, cooked and crumbled optional


  1. Preheat oven to 420 degrees. Spread potatoes on baking sheet and drizzle with 1 TBS olive oil, salt, pepper, garlic and onion powder, and paprika.
  2. Roast, stirring halfway, for about 25-30 minutes until potatoes are golden and crispy.
  3. Transfer to large bowl to cool while you make the dressing.
  4. For the dressing: add remaining 1 TBS olive oil and remaining ingredients in small bowl. Mix well until combined.
  5. Pour dressing over potatoes and mix until all potatoes are evenly coated.
  6. If adding bacon, mix into potatoes.

  7. Serve warm or chill in refrigerator for at least 1 hr. before serving.

Recipe Notes

*Bacon can be added for added flavor!  Cook until crispy and toss in with potatoes after dressing with honey mustard.
