Full disclosure…I’ve never been a huge fan of cooked carrots.
They have to be spot on for me to even consider putting them on my plate. Don’t come at me with mushy, plain ol’ baby food-tasting carrots.

These carrots are oven roasted with maple, lemon, fresh ginger, thyme and garlic, giving them a delicious sweet and savory flavor. They’re quick and easy, making them the perfect healthy side dish recipe for your holiday dinner!
That’s the kind of carrot I can dig (or fork) ;).
You can cut the carrots anyway you’d like. I prefer them in thin diagonal slices, which helps to create a slightly crunchy outside and tender inside. (and I happen to like how the diagonal slices look)
If you prefer thicker chunks of carrot, go for it, just keep in mind since the pieces will be bigger, they will need to roast a little longer in the oven. You can even leave the carrots whole if cutting them is not your forte.
Simple and easy, these oven roasted carrots pack a punch of flavor making them a tasty healthy vegan/vegetarian side dish.
The tanginess from the lemon combined with the sweetness of the maple syrup really gives these roasted carrots a wonderful flavor.
These roasted carrots are really great for any dinner side dish, however, they’re my go-to Easter side dish because the flavors give me spring favor!
Speaking of Spring, I think we’re in the safe zone now with the snow and below freezing weather. I actually came home the other day and was pleasantly surprised to see my tulips starting to sprout!!!

Lemon Maple & Ginger Roasted Carrots
These easy, lemon maple & ginger roasted carrots are cooked with a hint of thyme until perfectly tender for a simple sweet and savory carrot recipe.
Ingredients
- 1 lb Carrots, peeled
- ¼ cup Maple Syrup
- ¼ cup Olive Oil
- Zest of 1 Lemon
- Juice of 1 Lemon
- 1 tsp Thyme
- 1 tbsp Freshly Grated Ginger
- 3 cloves Garlic, minced
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Preheat oven to 350 degrees.
- Slice carrots on a diagonal about ¼” thick. Place in large bowl.
- In small bowl, whisk together remaining ingredients.
- Pour over carrots and toss to combine.
- Transfer to baking dish and bake for 45-50 minutes, stirring every 20 minutes or so, until carrots are tender.
