Salmon is one of those fish you either love or hate.  To me, the flavor is subtle IF cooked with the right flavors.  It’s also packed with omega-3’s (the healthy-heart fat), vitamin B and protein so it’s my fish of choice.

Easy Oven Baked Panko Crusted Salmon with Maple Mayo is one of my go to dinner recipes.

The salmon with maple mayo is AMAZING…I like making enough to store in a small jar so we have it to put on sandwiches, burgers or a yummy dipping sauce for fries.  It’s seriously that darn good and wickeeddd (I’m so Rhode Island) easy.

I have tried it with white fish (cod/haddock), however, I prefer it best with the panko salmon, but that’s just my opinion.  You can certainly try it with any fish you’d like!

Easy Oven Baked Panko Crusted Salmon-a healthy and quick dinner recipe

I try to make salmon at least once a week so I’m always experimenting with new ways of cooking it and new flavor pairings.  This panko crusted salmon is my all time favorite, not only because it’s so easy, but it’s got the perfect crunch and the maple mayo is irresistibly good ;).

Easy Oven Baked Panko Crusted Salmon with Maple Mayo

Moist and flaky salmon is brushed with a sweet and tangy maple mayo, crusted with panko breadcrumb and baked, not fried (of course!)…all of the flavor, none of the guilt 🙂

Ingredients

For the Maple Mayo:

  • 1 cup mayonnaise light
  • 1 tbs yellow mustard
  • 2 tbs maple syrup
  • 1/4 tsp garlic powder
  • salt and pepper to taste

For the Salmon:

  • 1 lb salmon cut into 4 filets
  • salt and pepper to taste
  • 3/4-1 cup panko bread crumbs
  • olive oil for drizzling

Instructions

For the Maple Mayo:

  1. Combine all ingredients together in small bowl/jar.  Set aside about 1/4 cup for the salmon filets.  Store the rest in refrigerator.

For the Salmon:

  1. Preheat oven to 375 degrees.  Line baking sheet with aluminum foil and spray with non stick cooking spray.

  2. Season salmon filet with salt and pepper

  3. Brush maple mayo generously on all four salmon pieces.

  4. Coat each piece with panko breadcrumb, pressing down gently to ensure it sticks.

  5. Place in oven and bake for about 25-30 minutes.  Fish should be light pink and flaky when cut into.

Recipe Notes

Maple Mayo can be stored in refrigerator up to a month.
